How come only the two of them get interviewed? It is a rare occasion to watch a YouTube vid with the whole gang.

There are interviews with Gregory. I would guess that it has become Noodles' and Dexter's task to do interviews. Dexter has (for obvious reasons) become a front figure of the band. Noodles does not mind talking so he follows Dexter. Voilà.

Gregory the only times I heard him say stuff, from the YouTube Japan/Tokyo and Splinter interviews.

Noodles his sarcasm is simply not a plain one nor dull when interviewed.

Dexter is so darn cute when he burst out his little nerdy-ness when interviewed.

Not only is Greg shy, but I think he just doesn't care enough to do interviews.
But Jojan is right, Greg interviews do exist (there are also several transcribed interviews with Greg that I've seen.)
